A popular local food truck is leaving Carbon County, but don’t worry the delicious food isn’t leaving the Poconos.

Pancho’s Mexican Food Truck has been serving Lehighton for years, but the co-owner decided it’s time to set up shop in Milford. Mike Gonzalez is bringing Yucatan food to La Posada Mexican Restaurant and Felix Cantina on 2nd Street. The grand opening will take place on Cinco De Mayo.

“It’s a little bit bittersweet because I love Lehighton. I love what we’ve been able to accomplish here locally. So, it’s one of those things where I’m excited about the next project, but I’m definitely definitely heartbroken about leaving what is now my hometown and moving on to somewhere else,” Gonzalez, said.

The food truck’s last day in Lehighton will be March 13th at Insurrection Distillery. Gonzalez plans to disband the food truck and sell the equipment.
