TheLumpiasRollin food truck will be doing less rolling and more parking. It has anchored down full time at The Farm food truck park on Braun Road near Loop 1604.

As the name implies, the truck specializes in lumpia, a kind of Philippine egg roll. Owner and chef Meiyan Magayanes fills her lumpia with low-fat turkey meat and serves them with noodles, rice or both and then tops them off with a creamy corn sauce.

“You have to do a little explaining to San Antonio people about what lumpia is, but once they try it, they have kept coming back,” Magayanes said. “Lumpia is traditionally made with beef or pork, but I wanted to put a healthier twist on it.”

Magayanes started her business in May, and will expand her menu to include chicken wings and butterflied chicken at a later date. She has kept her original food truck, which is now used for catering and special events.
